What a change of pace that was… Thanks to our recent lunch where I enjoyed Thai for the first time(pathetic, I know. Shut up) , I found myself looking at the Thai portion of the menu at our favorite sushi restaurant. I couldn’t resist getting the seaweed salad AND miso soup that I would’ve gotten with sushi anyway, so I guess you can say I definitely went full fatty with this meal.
This is their Panang chicken. They describe it as a rich, thick red curry cooked with coconut milk, coriander, basil leaves, asparagus, and peppers. And you taste every single ingredient coming together in a glorious blend of deliciousness. Seriously this was AMAZING and a flavor explosion, to be honest. You immediately taste the sweetness of the coconut milk when you take a bite, followed by a strong kick that never overpowers, but just sits there while you savor exactly what’s going on in your mouth.
Seriously this was one of the best lunch dishes I’ve ever eaten. Two fat thumbs WAY up.
